Do not waste hours dropping individual tomatoes into boiling water to peel skins by hand.
- Wash ripe paste tomatoes, slice them in half or quarters, and place them directly into a large stainless steel stockpot.
- Simmer over medium heat for 15 to 20 minutes until the tomatoes collapse into their own juices.
- Pass the hot mixture through a manual rotary food mill fitted with a fine screen. The mill effortlessly strains out 100% of seeds and tough skins while pressing thick, velvety pulp through into your collection bowl.
Step 2: The Oven Reduction Trick for Thick Paste
Reducing liquid tomato puree into thick marinara sauce or paste on a stovetop requires hours of continuous stirring to prevent scorching.
- Pour the milled puree into deep stainless steel or enameled turkey roasting pans.
- Place pans into an oven preheated to 300°F (150°C). The high surface area and ambient oven heat evaporate moisture quickly with zero risk of burning the bottom.
- Stir once every 45 minutes. Reduce by 50% for standard canning sauce, or by 75%–80% for concentrated, rich tomato paste.

Clostridium botulinum bacterial spores cannot germinate in environments with a pH below 4.6. While older heirloom varieties were naturally acidic, modern paste tomatoes frequently test between 4.8 and 5.2 pH, making them unsafe for boiling water-bath canning without added acid.
- Per Pint Jar: Add 1 tablespoon bottled lemon juice (or 1/4 tsp citric acid).
- Per Quart Jar: Add 2 tablespoons bottled lemon juice (or 1/2 tsp citric acid).
- Always use commercially bottled lemon juice; fresh lemons have variable acid levels.
Step 4: Water-Bath Processing Timeline
- Ladle hot sauce into sterilized jars, leaving exactly 1/2-inch of headspace.
- Wipe rims with a clean cloth dipped in white vinegar to remove grease or residue.
- Apply lids and screw bands fingertip-tight.
- Process in a boiling water bath (fully submerged under 2 inches of rolling boiling water):
• Pints: 35 minutes
• Quarts: 40 minutes (adjust upward for altitudes above 1,000 ft). - Cool undisturbed for 24 hours. Remove bands, test seals, and store in a cool, dark pantry for up to 2 years.
